Pumpkins

The other night Anthony and I each carved a pumpkin. You will notice that there aren't any photos of the final results...lets just say I followed the rules of not interfering in children's art and Anthony suggested we paint them next year:) But the process was fun regardless of the outcome and I love love love roasted pumpkin seeds so it was a winning situation for this lady.

And in no relation to the pumpkins we carved, the next night I made
pumpkin and ricotta stuffed pasta. It was yummy.
Happy Halloween!

  2. haha. No domestic goddes, just picked up a few hobbies in the last little while. The recipe is from a cruise ship book (same with the egg plant one) but i didnt follow it too close...just cooked the shells, then put them on a cookie sheet and drizzled with oil. Then mixed a can of pumpkin, 2.5 cups ricotta cheese, basil, 2 cloves of minced garlic, shredded old chedder, an egg, salt and pepper all together, stuffed the shells, put a jar of tomato sauce in the bottom of a pan and arranged the shells in the pan, sprinkled with parmasean and cook covered for about 25 min at 350. uncover and cook for 10ish more minutes. Volia!
